cookie dough bites (vegan, gluten-free, refined-sugar-free, and oil-free)
- 1 1/4 cups canned chickpeas
- 1/2 cup + 2 tbsp peanut butter
- 1/4 cup maple syrup
- 2 tsp vanilla
- 1 tsp baking powder
- 1/2 cup chocolate chips
blend everything except the chocolate chips in a food processor until smooth. stir in the chocolate chips. form into balls and bake at 350 for 10 minutes. store extras in the fridge.
these are honestly more amazing than most actual cookies because they stay soft. it’s a combination of cookie dough and baked cookies in the best way.
